  • 2 heaping cups sweet potatoes, cooked and cubed
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup shredded sharp cheddar cheese
  • 1-2 oz cream cheese, melted
  • ¼ cup mild salsa
  • 10 (8”) flour tortillas
  • 1 tbsp melted butter
  • 1 tbsp olive oil
  • ⅓ cup Vegy Vida™ Zesty Southwest


  1. Preheat oven to 375°.

  2. Line a large baking sheet with parchment paper or lightly grease.

  3. Call in the Kids!: Gently toss together sweet potatoes, black beans, corn and cheese in a large mixing bowl. In a small mixing bowl, mix cream cheese and Vegy Vida™ Zesty Southwest. Pour over the sweet potato mixture and toss until well combined.

  4. Scoop 1/3 of the mixture onto a tortilla, spread, and roll tightly. Place the seam side down on the baking sheet. Repeat with remaining filling.

  5. Mix butter and oil and brush over tortillas with a pastry brush. Bake for 15 minutes or until lightly golden.

  6. Serve with your choice or guacamole or ranch dressing for dipping.

  7. ** Parent Hack:

    For a more even coating and better wrap, scoop your mixture from the lower third of the tortilla and spread up as you roll tightly.
