Zesty Southwest Baked Sweet Potato & Black Bean Taquitos

- 2 heaping cups sweet potatoes, cooked and cubed
- 1 can black beans, rinsed and drained
- 1 cup corn
- 1 cup shredded sharp cheddar cheese
- 1-2 oz cream cheese, melted
- ¼ cup mild salsa
- 10 (8”) flour tortillas
- 1 tbsp melted butter
- 1 tbsp olive oil
- ⅓ cup Vegy Vida™ Zesty Southwest
Preheat oven to 375°.
Line a large baking sheet with parchment paper or lightly grease.
Call in the Kids!: Gently toss together sweet potatoes, black beans, corn and cheese in a large mixing bowl. In a small mixing bowl, mix cream cheese and Vegy Vida™ Zesty Southwest. Pour over the sweet potato mixture and toss until well combined.
Scoop 1/3 of the mixture onto a tortilla, spread, and roll tightly. Place the seam side down on the baking sheet. Repeat with remaining filling.
Mix butter and oil and brush over tortillas with a pastry brush. Bake for 15 minutes or until lightly golden.
Serve with your choice or guacamole or ranch dressing for dipping.
** Parent Hack:
For a more even coating and better wrap, scoop your mixture from the lower third of the tortilla and spread up as you roll tightly.
