Why are veggies so special anyways?

Your mom made you eat them. “You’ll grow up big and strong!” she said. Or perhaps you got the all too famous “You cant have any dessert until you eat your vegetables!” Why did our moms care so much about eating those darn veggies anyways?

As early back as I can remember I have always had a fascination with nutrition and healthy eating. I would ‘revise’ some of my mom’s recipes to make them healthier. Even back then I knew there was something to this ‘healthy eating’ stuff. Turns out, our moms were right, of course! (Aren’t they always?)

Vegetables provide so much nutrition packed into the very few calories they contain. Fat soluble vitamins, water soluble vitamins, fiber, water, anti oxidants, enzymes for better digestion, the list goes on and on. Nutrition research is uncovering new amazing benefits of eating vegetables regularly!

The bottom line is, you need veggies to feel and look your best. And isn’t that what we all want?! A life full of vitality and wellness!
